What the specification covers.
Our 1121 basmati is drawn from a short list of four roller mills in Punjab, all of which we have audited and which we hold an ongoing supply relationship with. Grain is aged a minimum of twelve months before milling, which is where the aroma and the elongation ratio come from.
Every lot is graded on grain length, breakage percentage, foreign matter, moisture and cooking yield. A cooking test is run on the sample you approve, and the same test is repeated on the pre-shipment sample; the number is on the certificate.
